3/4 cup packed brown sugar
1/4 cup oil
2 eggs
1 cup canned pumpkin
1/4 cup water
1 1/2 cups flour (I used 1 cup of whole wheat)
3/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground cloves
1 tsp. cinnamon
1/4 tsp. salt
1/2 tsp. nutmeg
1/2 cup chocolate chips
Preheat oven to 400.
Mix sugar, oil, and eggs. Add pumpkin and water and mix well. In another bowl, mix dry ingredients. Add in the pumpkin mixture and stir until well combined. Stir in chocolate chips. Fill greased or lined muffin cups 3/4 full and bake for 20-25 minutes. Makes 12 muffins.
